Here are TWO great Caribbean cookbooks that are hard to find together!

First, The Caribbean Pantry Cookbook: Condiments and Seasonings by Steven Raichlen
This is a hard cover book with a collection of 70 Caribbean recipes, covering marinades, sauces, oils, vinegars, jams, jellies, chutneys, pickles, relishes, sweets, snacks and drinks. The dishes include Sauce Chien, Mojito, Tamarind Banana Chutney, Pickled Limes, Jamaican Gingerbread and Passion Fruit Rum.

Cafe Mima Cuban Cookbook
(Cocina Cubana) by Yoly N. Perez
The book is arranged in Menu style, with specials of the day and a la carte items. Just pick a day and you have a whole menu presented to you. The recipes are straightforward and the pictures accompanying each recipe are artfully constructed; they have a very personal, handcrafted feel to them.
Ultimately, however, the proof is in the pudding - so far I have tried Moros y Christianos (rice and beans), Papa Rellena (potato stuffed with ground beef), and Platanos Maduros Fritos (fried ripe bananas.)
