Here is a great deal on a first edition, vintage 1950, hardcover book with 882 pages titled... America's Table : Food Presentation Service Profits Science Practice by Joseph Vehling. (Please read the WHOLE description!!) This cookbook is great for the foodie, chef, amateur cook or food historian who would love a vintage dictionary of dishes and ingredients. Great reference of foodstuffs for the restaurant, bar, club, hospital or any large food service business.
Please see ALL the pictures.... The dust jacket show wear and tears---the front and black flaps have come away for the DJ--and being held by a mylar DJ cover. Section missing from the back DJ. The book itself is in good used condition with just some wear to the edges and tips from reading and re-shelving. INSIDE the first few pages were signed by the original owner on the first 4 pages.. and dated 1950. Gee...he really wanted to make sure there was no question this was his book. OTHERWISE the pages are at least 99% free of any other marks, stains or writing. Just a bit of foxing to the edges of the pages from age. The first page has an old used book store price in pencil at the top of the page--$25 YEARS ago!

An original restaurateurs' guide in dictionary form, and pricing from the post WWII era. For example, a cup of coffee in 1950 cost from 3.75 cents to 4 cents made under the following FIRST CLASS conditions: 1 lb coffee at 30.5 cents (wholesale) yields about 300 fluid ounces of black coffee if made in a firs class urn with 2 1/2 gallons of boiling water. The cost of 5 ounces of black coffee is 5.10 cents...add to this the customary "second helping which is enjoyed by 30% of customers, and unavoidable overproduction of 10% thus your cost per cup will be 3.567 CENTS per cup! This is just one of 1000's of amazing facts, measurements, information, definitions of all things that are food---OLD SCHOOL!
