Great book for historical reference. It contains about 40 illustrations, and 50 Poems and Spirituals. Good Southern cooking reference.
Many of these date back to the Civil War to the time the Southern Sates were known as the Confederate states of America, C.S.A. Confederacy.
Since mammies couldn't rely on written receipts (or recipes), most of the wonderful recipes from these great cooks derive from tradition and experience for many were not learned in the manner of reading and writing. They created magic in their kitchens with whatever they could.
