This book explores the apparently bewildering variety of shellfish types and teaches the ways in which each may be presented at its most delicious. The introduction to the first half of the volume includes a guide describing the different shellfish available to the cook and demonstrations showing how to detach each from its shell or otherwise ready it for cooking. The succeeding chapters are devoted to different methods of shellfish cookery (poaching and steaming, stewing, frying and sauteing, and French cuisine).
The second half of the volume is an anthology of more than 200 recipes collected from cookbooks old and new. The anthology serves as another teaching tool: it show specific applications of general techniques described in the first half of the volume.
